    high heat is very very ideal for chinese/asian cuisine. Thats why I use a separate burner, because the heat must be evenly distributeed to mak e the vegetables crispy. And for good meat stir frys its needed very high heat.
    In ancient china its not a secret that the preparation took long time, but the cooking not long.
