The Real Italian Wedding Soup

Italian Wedding Soup is a special dish for a special occasion. Not necessarily this soup is always made for the wedding occasion; you can try this amazing taste of an Italian soup in your home for the dinner with your friends and family. This soup is extremely easy to make and taste just great. The following preparation would take about 20-25 minutes and serves for 8 people.

Required Ingredients for Italian Wedding Soup

For the Soup

· 10-12 cups chicken broth (low-sodium)
· 1 oz Endive (chopped coarsely)
· 2 Eggs
· 1½ Carrot (diced)
· 2 tablespoon Parmesan (freshly grated), and some more for garnishing
· Salt to taste
· Ground pepper to taste

For the Meat Ball

· 8 oz of extra lean ground-beef
· 8 oz of ground pork
· 1 medium onion (grated)
· 1 Egg
· 2 minced garlic cloves
· 1/3 cup Italian parsley (chopped fresh)
· Salt to taste
· Ground pepper to taste
· 1 fresh bread (crust trimmed and cut into pieces)
· ½ cup Parmesan(grated)

Preparation

Start with making Meat ball. For this, mix the onion, fresh Italian seasoning (optional), Italian Parsley, egg, minced garlic, salt, and bread pieces into a bowl. Now blend the whole ingredients and stir along with beef, porn and cheese. After you make this, take a spoon and take 1½ spoon from the mixture to make one inch diameter meatballs. Place the meatballs in a baking sheet. Now you are done with meatballs. Now let’s make the soup.

For the Soup, pour the chicken broth in a pot and put on a medium high heat. When the broth starts to boil, put carrot (finely chopped), and start to put the meatballs in the boiling chicken broth. Be careful when you are putting the meatballs because you don’t want to mess the shape of the meatballs. Along with this, add the coarsely chopped endive. Now leave it to simmer.

Now make sure that the meatballs are well cooked and the endives feel tender when touched. Usually, you just have to cook for around 8-10 minutes. Stir frequently. Meanwhile take the eggs and cheese, and make a mixture in a small bowl by stirring in a circular motion. Now gently and slowly pour the mixture into the broth and keep the stirring going on. To find out whether the meatballs are cooked or not, just make sure that meatballs are not anymore pink inside

Ladle the soup in your favorite bowl and garnish with parmesan cheese sprinkled on the top to make give it more gravy look and mouthwatering taste that touches your heart.

There are various variations that you can use. Such as instead of onions, you can use garlic powder, use additional precooked orzo pasta, use frozen chopped spinach, use seashell pasta and different ingredients to make it more delicious soup.
